Oolong teas where traditionally grown in Fujian province, South eastern China and is still today defined by regions when it comes to varieties of Oolong tea.
In the northern Fujian region famous Wuyi Mountain with its baked, dark rock teas like Da Hong Pao, Shu Xian, Rou Gui, Bai Ji Quan and Huang Guan Yin. In the middle and southern parts of Fujian around the city of Anxi you will find probably most famous kind the Tie Guan Yin or Iron Goddess, a light oxidized and rolled variety. Further south in the northern Guangdong province, another rock tea grows, again a Shuixian, but much more floral in taste.
